Quick 'n' Easy Recipe Of The Week: Peanut Butter Pancakes
Listen up guys cause shit is about to get real. I hate to be the one to break it to you but exams are just around the corner. FUUUUUUUUCK! Panic is setting in and you know there is no denying how completely and utterly screwed you are. The time you should have spent sitting in lectures writing notes and raising your hand to ask intelligent questions, has instead been spent with your head in a toilet puking your absolute ring up as a result of the previous night’s events! However "worth it" it was, there’s no coming back from those missed lectures now, so the only thing left to do is start cramming the shit out of it! Nevertheless, do not fear because I’ve got just the thing to get you through those hours and hours of mindless study – this easy recipe for healthy and wholewheat peanut butter pancakes!

This recipe is high in the nutrients which work to trigger the feeling of happiness, (making these babies the perfect antidote to the thought of the hours upon hours you are going to have to spend over the next few weeks revising).
They’re also a super easy to whip up and are a perfectly healthy treat. Winning! Serve these bad boys with some chopped banana and chia seeds (or opt for some strawberry jam, if you wanna go all peanut butter and jelly on us) for that extra oh-la-la. Trust me guys, you NEED these pancakes in your life. Your entire future depends on them!
Ingredients
1 egg
6 tbsp milk
4 tbsp peanut butter
2 tbsp honey
1/2 tsp baking powder
100 g wholewheat flour
1 apple (grated)
pinch of salt and cinnamon
To serve: chopped banana, maple syrup and chia seeds
Method
1. Pour the egg, milk, peanut butter, honey, cinnamon, salt and baking powder into a blender and
mix to combine.
2. Next add in the flour, apple and blend until it is smooth and resembles a regular pancake
mixture.
3. Heat a pan over a medium heat and add a little oil or butter. Pour in the batter and leave to cook for around 3 minutes.
4. Turn the pancakes over and cook for another 2 – 3 minutes depending on how thick you’ve
poured them. The pancakes ready when they are a beautiful, golden brown colour.
5. Stack the pancakes one on top of the other and decorate with some chopped banana. Sprinkle
over some chia seeds and finally a little dash of maple syrup before serving them up! (Serves 4 btw) Enjoy!
