Why Go Organic? Plus - Organic Persian "Beet-Bab" Skewers Recipe


Organic foods are foods that are produced without pesticides, chemicals or genetically engineered ingredients.

Today’s conventionally grown fruits and vegetables have about half the vitamin content as they did in the 1960's.

Organically grown food is 63 percent higher in calcium, 73 percent higher in iron and 118 percent higher in magnesium, while being 29 percent lower in mercury.

Pesticides in our food have been linked to hormone imbalance, breast cancer, uterine cancer and asthma.

Food in Ireland has become unhealthy, chemical dependent and highly processed.

Organic fruits and vegetables have higher levels of flavour, lower concentrations of water and sugars and no artificial food colors or preservatives are added to any organic foods. Leaving them even more delicious and healthy for you to eat.

So, whats on the menu today?

Menu:

    Persian "Beet-bab" Skewers (Organic of Course)

You will need the following:

2 Large Cooked Beetroot (not pickled)

400g Kidney Beans

1x garlic clove

100g Porridge Oats

1x Onion (small)

1x Carrot (grated)

Lemon Zest of 1 Lemon

Small bunch of Fresh Coriander

1 tsp Cinnamon

1 tsp Ground Nutmeg

1 tsp Ground Coriander

1 tsp Cumin

Salt and Pepper

Sesame Seeds (Optional)

To Serve:

1 x Courgette

1x Tomato

1x Red Onion

Feta Cheese

If you have a food processor, now's the time to root it out! If not a good potato masher will do, with a lot of upper body strength!

Method:

  • Drain the tin of kidney beans and rinse with water before popping in processor/bowl.
  • Roughly grate the beetroot, (warning do not wear white for this) carrot and onion into kidney beans.
  • Add finely chopped garlic into the mix along with the lemon zest and oats.
  • Chop up some fresh coriander; sprinkle through along with all the dry spices. Give this all a big stir and then blitz or mash until it comes to a sticky mix.
  • Wet your hands then grab a handful and roll into balls.
  • Dip and cover in sesame seeds (if using them) then shallow fry in a little olive oil. Meanwhile chop up chunky pieces of courgette, tomato and red onion and slightly char under the grill.
  • When beet balls are golden brown, remove from heat and start to arrange your skewers accordingly.

Helpful Tip!

If you don't have wooden skewers, dry spaghetti works just as well. Serve with some feta cheese and fresh coriander.
