The winter months are rolling in and we all need those quick sweet treats to chill with when we're scrolling through Netflix. If you need that carrot cake fix in half the time and without any of the hassle than this is the perfect recipe for you. Did I mention it's really low in fat? More pleasure, less guilt. Here's everything you'll need to make your carrot cake in a mug and feel instantly satisfied:
- 2 level tablespoons of self-raising flour
- ½ a teaspoon of ground mixed spice
- 2 level teaspoons of sweetener
- 1 small carrot, peeled, ½ grated and ½ peeled into ribbons with a vegetable peeler
- 1 medium egg, lightly beaten
- 2 tablespoons of skimmed milk
- fat-free natural Greek yogurt, to serve / yogurt of your choice/ cream
- ground cinnamon or nutmeg, to dust
- Pop your flour, mixed spice and sweetener into a 250ml mug and stir ingredients until they're combined.
- Add your grated carrot, egg, and milk into the mix and stir all the ingredients together.
- Place your mug in the center of the microwave turntable and cook on high for 2 minutes or until the cake has risen.
- Your cake will remain slightly moist in the center but leave it to stand for 5 minutes and it will thicken as it continues to cook.
- You can eat the cake straight from the mug or turn the mug upside down and place it on a plate.
- Add a big dollop of your favourite fat free greek yoghurt or topping and dust with cinnamon or nutmeg and decorate with the carrot ribbons.
- Dig into your cake while it's still warm before it dries out. Delicious.
